My Hungry Husband

This is a quick and easy light meal that you can throw together when you don’t know what to make.

Ingredients:

  • 10 Soft Taco Shells from Pick n Pay (R14.95)
  • 2 Chicken Breasts
  • Cayenne Pepper, Salt, Red chilli and garlic paste
  • 1 Bag of mixed coleslaw or make your own (Cabbage, carrot)
  • Mayonnaise, Yoghurt, Sriracha
  • Chopped coriander
  • Pickled red onion (Woolies R12,95)

Method:

  1. Season the chicken breasts with cayenne pepper or paprika, salt, red chilli and garlic paste
  2. Heat a frying pan on medium heat and add a little bit of oil. Place the chicken breats in the pan and leave them to caramelise. Once you can see the edges of the chicken turn white (opaque), turn the chicken over and cook the other side. Once both sides are nicely browned they should be almost cooked. Add a little bit of water to the pan and cover with a lid. The steam will help the chicken to cook. Take out of the pan and leave aside to rest. Slice after 5 minutes.
  3. Take the coleslaw mix and add a generous amount of mayonnaise. If you want to make the coleslaw a little bit calorie conscious add half mayo and half yoghurt. Season with spices of your choice – I used sriracha sauce.
  4. Add the chopped coriander to the coleslaw and mix.
  5. To assemble your tacos, place some chicken on each, then top with coleslaw and pickled red onion. Quick and delicious!
