Blueberry Streusel Muffins

I was in a baking mood, but not in a cleaning one so I made these blueberry streusel muffins using Golden Cloud Vanilla Muffin mix. I added a few handfuls of frozen blueberries and made a streusel topping to give these an extra oomph! It did not disappoint.

In other exciting news, My Hungry Husband was selected by Feedspot as one of the Top 25 Cape Town Food Blogs on the web. Can you even deal?!

Here is the recipe for the streusel topping I made:

INGREDIENTS:

  • 3 Tb butter
  • 6 Tb flour
  • 3 Tb sugar
  • 2 Tb oats

METHOD:

  1. Rub the cold butter together with the other ingredients, using your fingertips until it resembles breadcrumbs.
  2. Sprinkle over any cake/muffin mixture for a delicious crispy topping.
  3. Bake until golden brown.
  4. Ready! can you believe it? These blueberry streusel muffins are now ready to be enjoyed.
